penne pasta with broccoli (click on "read full below")

INGREDIENTS:pasta.gif

1 box penne pasta cooked per box instructions
2 29oz cans tomato sauce (Contadina)
1 carton heavy whipping cream
1/2 jar minced garlic
1 package ground italian sausage or 4 boneless/skinless chicken breasts diced
6-8 fresh basil leaves cut into thin strips
1 T per person grated parmesean
1C steamed broccoli florets per person
2-3 T olive oil
salt and pepper

DIRECTIONS:

Boil chicken and set aside (if using).  Saute garlic in olive oil over med-low heat in a heavy saucepan until garlic become soft and translucent (do not burn).  Add italian sausage (if using) and cook until brown (break up sausage into small pieces).  (NOTE: If using chicken, add it back into the pan at this time.)  Add tomato sauce and cream.  Stir until thoroughly combined.  Add 4 of the basil leaves and mix thoroughly.  Bring sauce to a boil.  reduce heat to low, cover and cook for 1 hour.  Check frequently. Salt and pepper to taste.

To serve, sprinkle parmesan and the rest of the basil on a serving platter.  (NOTE: If serving individual plates, then use 1 T parmesan per person and split the basil equally). Top with pasta, followed by sauce.  Serve the broccoli on the side.
